An exemplar of the casually stylish restaurant model that has been trending in İstanbul for a few years now, Gümrük has a menu that changes each day according to what's fresh at the market. Dishes are often clever twists on classic Turkish street food – think beautifully presented pilafs, flavourful offal dishes and a delectable balık ekmek(fish sandwich).

Turkish culture and cuisine are at the heart of this Istanbul restaurant. Both the menu and the setting are inherently Turkish – decor features traditionally Turkish accents while dishes recall Ottoman recipes dating back thousands of years. Nar includes an indoor dining room as well as three terraces and a rooftop for the warmer months and private parties. You’ll never find out-of-season produce at this Istanbul establishment – all dishes are crafted to be seasonal and fresh. As with traditional Turkish cuisine, many of the main courses feature lamb (shoulder of lamb, braised lamb shank, stew with lamb), but seafood dishes like filet of sea bass and prawn casserole are also available to order.
With its modern lines, spacious atmosphere with high ceilings, unique historical peninsula view and privileged service, Ali Ocakbaşı gives its guests a different and unconventional taste experience.

Balıkçı Sabahattin is an enduring favourite with discerning Turks from near and far, who enjoy the limited menu of meze and seafood, including fish from red mullet to sole. This is Sultanahmet's most prestigious restaurant and its best food, although the service can be harried. You'll dine under a leafy canopy in the garden (one section smoking, the other nonsmoking).

On the top floor of a dishevelled building off İstiklal, Leb-i Derya has wonderful views across to the Old City and down the Bosphorus, meaning that seats on the small outdoor terrace or at the bar are highly prized. Many people enjoy the pricey modern Mediterranean food on offer, but we aren't impressed, so only recommend it as a bar.
